I Smell Bacon!!!

So today I had a life changing event. Really, I’m not kidding.

If you’re a carnivore, or even an omnivore, you probably love bacon. What’s not to love? It makes everything taste better. But it seems that every time I fry some up for the family, I get burned. Now, I do have to cook a LOT of bacon when I fix it. My 7 year old alone could eat an entire pound if I would let him. Then there’s my hunky husband. He’s got to, “Feed the muscle!” LOL Males really don’t need an excuse to eat bacon at any age.

I remember my mom getting a contraption to cook bacon in the microwave. Yep. That didn’t last long. It made a mess, and was at best inconsistent. Not to mention the lovely chemicals leaching out of the plastic into the bacon.

But I did not know until quite recently that there was a better way to cook bacon… in the OVEN. The oven, I tell you. It’s miraculous, and I have pictures to prove it!

Here’s what you do:

  1. Place a cooling rack onto a baking sheet or other large pan.
  2. Place bacon slices on rack.
  3. Turn oven on to 400 degrees Fahrenheit.
  4. Immediately put bacon into the oven and set timer for 17 minutes. Do not preheat the oven. The bacon needs to slowly warm up with the oven to cook evenly. Really, it works!
  5.  No need to babysit this bacon. If you’re using thick cut bacon, and you want it crispy, you may need to let it cook for 2 more minutes.
  6. You can reserve the bacon drippings for later use. Store in an air tight container in the refrigerator.

Ok, so man cannot live on bacon alone. Well maybe a man could but not a woman, so I decided to make omlets after big Pat began salivating over an iHOP commercial. So I sauted some red onions, bell peppers, and mushrooms in a couple of tablespoons of butter.

Yes, that’s canned mushrooms you see. Just using what I had on hand.

Saute over medium heat until things begin to brown a bit. I like to let my onions caramelize.

 

 

 

 

 

 

 

Then I set the veggies aside in a bowl, and I whisk my eggs with a bit of sea salt. Nothing else.

Dig in!

We did!

There’s no looking back for this physicschick! It’s bacon in the oven from now on!
